eso=that (by itself)
ese/esa + sustantivo = that + noun
Ejemplos:
eso es un libro; eso es una silla = that is a book; that is a chair
ese libro es interesante = that book is interesting
esa silla es verde = that chair is green
The same pattern applies to "esto", versus "este/esta", except that it means "this" instead of that.
